This gumbo is very light because it doesn&#8217;t have a roux. It is thickened with okra and gumbo file. The gumbo file, which is made from ground sassafras leaves, can be found online or in specialty spice shops.<\/p><\/blockquote>\n<header class=\"recipe-hdr hdr\">\n<div class=\"recipe-hdr-info\">\n<ul class=\"recipe-meta meta\">\n<li class=\"meta-item meta-prep-time meta-1\"><span class=\"meta-title\">Prep Time:<\/span> 20 minutes<\/li>\n<li class=\"meta-item meta-total-time meta-2\"><span class=\"meta-title\">Total Time:<\/span> 40 minutes<\/li>\n<li class=\"meta-item meta-yield meta-3\"><span class=\"meta-title\">Yield:<\/span> 6 to 8 servings<\/li>\n<\/ul>\n<div class=\"utility-toolbar\"><\/div>\n<\/div>\n<\/header>\n<div class=\"unify unify-directions-ingredients\">\n<section class=\"page-section page-section-ingredients\">\n<h2 class=\"page-section-title\">Ingredients<\/h2>\n<div class=\"li-checklist page-section-group\">\n<ul class=\"li-checklist-items ingredients\">\n<li class=\"ingredient checklist-item\">1\/4 cup vegetable oil<\/li>\n<li class=\"ingredient checklist-item\">1 pound small okra, caps and tips removed, sliced 1\/4-inch thick<\/li>\n<li class=\"ingredient checklist-item\">2 cups chopped onions<\/li>\n<li class=\"ingredient checklist-item\">1 cup chopped celery<\/li>\n<li class=\"ingredient checklist-item\">1 cup chopped green bell peppers<\/li>\n<li class=\"ingredient checklist-item\">1 14.5 ounce can petite diced tomatoes<\/li>\n<li class=\"ingredient checklist-item\">1 teaspoon salt<\/li>\n<li class=\"ingredient checklist-item\">1\/2 teaspoon cayenne pepper<\/li>\n<li class=\"ingredient checklist-item\">1 tablespoon chopped garlic<\/li>\n<li class=\"ingredient checklist-item\">3 bay leaves<\/li>\n<li class=\"ingredient checklist-item\">2 quarts fish stock<\/li>\n<li class=\"ingredient checklist-item\">1 teaspoon Worcestershire sauce<\/li>\n<li class=\"ingredient checklist-item\">2 teaspoons Emeril&#8217;s Essence Creole Seasoning<\/li>\n<li class=\"ingredient checklist-item\">1 pound medium shrimp, peeled and deveined<\/li>\n<li class=\"ingredient checklist-item\">1 pound firm-fleshed fish, such as wild drum or grouper, diced<\/li>\n<li class=\"ingredient checklist-item\">1 pound fresh lump crabmeat, picked over for shells and cartilage<\/li>\n<li class=\"ingredient checklist-item\">1 pint shucked fresh oysters in their liquor<\/li>\n<li class=\"ingredient checklist-item\">File powder to taste<\/li>\n<li class=\"ingredient checklist-item\">1\/2 cup chopped green onions, green part only<\/li>\n<li class=\"ingredient checklist-item\">Dash of hot sauce<\/li>\n<li class=\"ingredient checklist-item\">4 cups cooked long-grain white rice, warm<\/li>\n<\/ul>\n<\/div>\n<\/section>\n<section class=\"page-section page-section-directions\">\n<h2 class=\"page-section-title\">Directions<\/h2>\n<div class=\"li-checklist page-section-group\">\n<ul class=\"li-checklist-items directions\">\n<li class=\"step checklist-item\">In a large stock pot, over medium heat, add the oil. When the oil is hot, add the okra. Season the okra with half of the salt and cayenne. Fry the okra, stirring constantly, for 10 to 12 minutes, or until most of the slime disappears. Add the onions, celery, peppers and tomatoes. Season with the remaining salt and cayenne. Continue cooking, stirring often for 18 to 20 minutes, or until the okra and other vegetables are soft. Stir in the garlic and bay leaves.&nbsp;<\/li>\n<li class=\"step checklist-item\">Add the fish stock. Bring the liquid up to a boil and reduce to a simmer. Simmer for 15 minutes. Add the Worcestershire sauce. Season the shrimp and\u00a0and the fish\u00a0with Emeril&#8217;s Essence Creole Seasoning. Add the seasoned seafood,crabmeat and oysters\u00a0to the pan. Continue to simmer for 5 minutes. Stir in the green onions and hot sauce.
