It\u2019s not a complicated \u2018recipe\u2019, but more so of a great healthy dinner idea or option. It\u2019s a stand by in our home and could easily be made with chicken, steak or shrimp.<\/p>\n\n\n\n<p>I seasoned my fish (by the way, I always have frozen fish in the freezer, it defrosts quickly and is perfect for last minute meals like this one was) with&nbsp;<a href=\"http:\/\/www.chefpaul.com\/site.php?pageID=365&amp;iteminfo=1&amp;productID=181\">Chef Prudhomme\u2019s Seafood Magic<\/a>&nbsp;(I prefer to use&nbsp;<a href=\"http:\/\/www.chefpaul.com\/site.php?pageID=365&amp;iteminfo=1&amp;productID=8\">Blackened Redfish Magic<\/a>&nbsp;but ran out!). I used&nbsp;<a href=\"http:\/\/bolthouse.com\/our-products\/dressings\/yogurt-dressings\/caesar-parmigiano\/detail\">my favorite salad dressing of the week<\/a>&nbsp;for this salad and topped it with a little freshly grated parmesan cheese and lemon pepper seasoning. I would have to say that it definitely hit the spot. Go ahead and throw on some croutons if you so desire.<\/p>\n\n\n\n<h3>Ingredients<\/h3>\n\n\n\n<ul><li>2\u00a0filets of mahi mahi, or Grouper, Swordfish (if frozen, defrosted)<\/li><li>blackening seasoning (I prefer Chef Prudhommes Blackened Redfish Magic or Seafood Magic)<\/li><li>non stick spray<\/li><li>mixed salad greens of your choice<\/li><li>lemon pepper seasoning<\/li><li>your favorite ceasar salad dressing (I prefer Bolthouse Farms)<\/li><li>freshly grated parmesan cheese, for serving<\/li><li>croutons, optional<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3>Instructions<\/h3>\n\n\n\n<ol><li>Preheat&nbsp; a non stick skillet over medium high heat. Pat your fish filets dry with a paper towel and sprinkle liberally with your seasoning. Spray your skillet with non stick spray and place your fish into hot pan. Let it sear and cook for about 5 minutes until bottom of fish starts to blacken cook through. Season other side of&nbsp; fish with seasoning and carefully flip over. Cook for an additional 5-7 minutes until fish becomes flaky (depends on thickness of fish).
