How to Make a Sesame Ginger Chicken Dinner You Can Eat out of a Pineapple

is recipe came about during the heart of winter. The snow was blowing sideways and teleporting to the Tropics didn’t exactly go as planned. I decided to buy a pineapple and go full tropical. This happened.
Feel free to mix and match with veggies and serve with any flavor of rice that you desire. I also recommend a stiff daiquiri on the side – Look at you, halfway to vacation already.

Ingredients
- 1/2 small pineapple
- 1 tablespoon honey
- 1 tablespoon coconut oil (for frying)
- 4 chicken tenders
- 2 tablespoons of garlic salt
- 2 tablespoons of black pepper
- 1/4 cup flour
- 1/4 cup fresh cilantro
- 3 tablespoons of sesame seeds
- 2 tablespoons of ground ginger
- 1/2 package frozen broccoli
- 1/4 sweet onion

STEP 1
Rinse chicken and coat with flour. Cook in a pan coated with coconut oil for about 2-3 minutes on each side. Season with garlic salt and pepper.

Take chicken off the heat briefly to cut into smaller pieces. Add again to the pan along with the cilantro, onion, broccoli, honey and sesame seeds.

Cook down the veggies until the broccoli has softened. Cut pineapple in half, scoop out one side and cut into chunks, save for later. Add in ginger and pineapple chunks.

Cook until pineapple is slightly browned and serve in empty pineapple half with a side of rice.
